We took the lazy route, and made our spinach pasta in our Philips pasta maker, but we’ve included simple step-by-step instructions for making it by hand as well!

Try this colorful vegetarian penne alfredo, made with spinach pasta, and homemade beet pasta! If you’re still craving carbs, this quinoa mac and cheese (our kids love it!), this breadcrumbs mac and cheese, or a no boil vegetarian lasagna may just hit the spot.

The great thing about homemade spinach pasta is that the ingredients are so simple.

There are only four ingredients for this recipe – flour, salt, spinach juice, and egg..

How to make homemade spinach pasta

Here’s how to make spinach pasta. To make this pasta, first you’ll need to make spinach juice.

If you already have spinach juice that you’ve bought, you can skip this step! Store bought spinach juice (if you’re lucky enough to find it, or get it made at a juicer) is hard to find, so we had to make our own.

Making your own spinach juice for pasta

We decided to make our own spinach juice in a blender, since we don’t own a juicer. You can also use a juicer if you have one.

For thespinach juice, we washed one cups of spinach leaves, put them in the blender, and added 1/3 cup of water.

Blend until leaves are fully pulverized.

We have a pretty powerful blender, so we didn’t add any more water. If your blender isn’t breaking down the leaves, add more water, one tablespoon at a time until the leaves blend into the liquid.

This pasta will be prettier if you use really dark green spinach juice. The more water you add, the lighter your pasta will be so add only enough so that it blends.

Strain the juice with a cheesecloth to get rid of any lumps or foam.

How to make homemade spinach pasta dough by hand

So, how do you make homemade spinach pasta from scratch?

Put beaten egg in measuring cup.

Add spinach juice to beaten egg, to make a total of 0.5 cups (4.0 oz) in total. If necessary, add water to increase volume to 0.5 cups.

Mix salt into flour.

Make a well in the center of the flour, and add egg and spinach juice mixture.

Mix the egg/spinach juice into the flour, Pulling flour into the center to mix into the eggs, gradually drawing in flour with each stroke. A stiff dough will form.

If the dough is too dry, add 1/2 teaspoon of water at a time.

If the dough is too sticky, add 1 tablespoon of flour at a time.

The dough will be much more stiff than bread dough.

Knead the pasta dough for ten minutes. The dough will be silky and smooth when done.

Cover the dough, and let sit for 45 minutes.

Divide dough into 3.

Roll each portion of dough on a floured surface, until it’s as thin as possible without tearing apart (about 1 1/6 of an inch).

Cut into thin strips.

You can use a knife to do this by hand, but a noodle cutter like this makes it much quicker!

You can cook your pasta right after it’s cut (for 3-4 minutes in boiling water), or you can set it aside to dry for later. This pasta drying rack is great for helping noodles dry evenly and quickly.

To make spinach pasta in the pasta maker, it’s a pretty simple process. The pasta machine does the kneading, rolling, and then extrudes the pasta in the shape you want.

There are plenty of options to choose from, including spaghetti and linguini, but we were feeling like rotini, so we chose the rotini setting.

From beginning to end, each kind of pasta only took us about 10 minutes to make.

To make the pasta, use the measuring cups that come with the pasta maker.

Put beaten egg in measuring cup.

  • 1/3 cups plus 3 tablespoons spinach juice
  • 1/8 teaspoon salt (optional)
