I should go ahead and apologize right now for the excessive photos of this easy Mexican dinner. You don’t mind, right? It’s so dang colorful and cheesy and delicious looking that the camera loved it. So did we!
I remember getting Mexican pizzas at Taco Bell when I was a kid and thinking it wasfast food rocket science. How clever to combine two of my favorite foods: tacos and pizza! I haven’t had their version in many years, but I do still remember them fondly. This week I wanted to make a version of my own. It’s not quite a copy-cat recipe since I would be basing it on a 25-year-old memory, but I do give good ol’ Taco Bell credit for the idea.
This version of taco pizza uses corn tortillas, not crispy ones, so it is best eaten with a fork. I did manage to hold and eat one piece like a regular slice of pizza, but the rest were a bit too soft. If you’re like me, you don’t really mind how the taco pizza gets to your mouth. These Mexican pizzas are very, very easy to make.

Stuffed Mexican Pizza Recipe
This taco pizza is simple to make, beautiful to look at, and a delicious meal!

Ingredients

- 1 pound ground beef or turkey
- 2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1 teaspoon dried oregano
- 3/4 teaspoon kosher salt
- cayenne pepper to taste optional
- 8 corn tortillas
- 1 cup refried beans
- 1 cup red salsa
- 1 cup green salsa (or use all one kind of salsa if you prefer)
- 3 cups Mexican blend shredded cheese
- 1 ripe avocado sliced
- 1 small can sliced black olives
- 4 Roma tomatoes diced
- 4 green onions sliced thin
Instructions
Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil, and spray with cooking spray. (Seriously, or else your pizzas might stick.)
Heat a skillet over medium high heat and spray it with cooking spray. Add ground meat and spices, and brown and crumble until cooked through. Drain meat if needed/desired.
Spread 1/4 cup refried beans evenly over four tortillas, and place them on the prepared baking sheet. Evenly spread meat over beans (you will probably have some leftover). Sprinkle 1/4 cup cheese over the meat, and drizzle with about two tablespoons of red salsa.
Place another tortilla on top, and spread 2 tablespoons of green salsa evenly over that one. Sprinkle 1/4 cup cheese over the salsa, and arrange avocado, olives, tomatoes, and green onions over the cheese. Sprinkle 1/4 cup cheese over the top of each pizza.
Bake in preheated oven for 8-12 minutes, until cheese is melted and bubbly. Carefully remove each pizza with a large spatula and serve.

Looks amazing. Can’t have spicy food so I’ll keep out the cayanne pepper and chili powder and just do a taco seasoning instead

question for you…the ingredients call for corn tortillas but in the instructions it says flour? Which works better? & does the oven temp or cook time change?

Hi, Chris! The instructions say to spread beans over four tortillas, not flour :) I used corn, but I’m sure they would still taste great with flour tortillas if you prefer. Thank you!

Stumbled across this on Pinterest, thankfully. I saw a similar pin the day before from Trader Joe’s but the recipe no longer exists. Anyway – wanted to give you kudos on marking your pictures with your blog URL. It’s worth doing! The pin I found went to another aggregated recipe site that gave you no credit other than what you marked your pictures with. Will be pinning this CORRECTLY. :-)

I would just like to say that I made these the other night, and they are amazing! I used a combo of colby jack and pepper jack cheeses. One pizza is enough to fill you up, too! Thanks for sharing this recipe. A keeper for sure.

Great recipe kids were complaining about the stuff I was putting on it but once it hit their mouths they loved it. I tweaked the recipe a little by using flour tortillas I just threw them in some hot oil for about 20 sec on both sides and layed them on a rack to harden. Great post loved it!!!

Mwahaha! I am a diet killer over here! Oh wait, I don’t think these are actually that bad. You could use reduced-fat cheese sparingly and maybe super lean beef or meat and be golden. Corn tortillas are pretty low in fat and calories compared to their flour compadres. At least this is all what I tell myself.

Loved this! I used corn tortillas and because of your comment about using a fork, I crisped up the tortillas before assembling. Just fried them in hot oil, about 20 seconds on each side. Worked well for eating like a pizza. My sweetie says this recipe is a keeper.
