This no bake Rocky Road recipe is made with marshmallows, chocolate candy, and digestive biscuits (you can also use graham crackers or rice crispy cereal). Everything is held together with a delicious chocolate coating.

I had a convenience store baggie of candy rocks and when I came across thisrocky road recipe. So I made a version of easy rocky road with chocolate rocks instead of chocolate chips to make these literally 'rocky'.

Ingredients and Substitutions

My rocky road squares recipe was inspired by a British recipe and I made it work with ingredients I had available in Vietnam at the time. It is a highly adaptable recipe

  • chocolate - use broken up chocolate bars or chocolate chips
  • butter - coconut oil would also work really well
  • honey - other liquid sweetener like maple syrup, golden syrup etc. can be substituted
  • mini marshmallows - you want small marshmallows so that you get a bit of everything in every bite. If you can find minis, use kitchen scissors like me to cut larger ones into small pieces
  • candy rocks - for a cool literally 'rocky' twist. Otherwise use chocolate chips, or other small chocolate candy
  • digestive biscuits - broken into small pieces. You can also break up Graham crackers or use rice cereal

Cut up large marshmallows with kitchen scissors if you don't have minis

Add chocolate, butter, honey to heat proof or microwave-safe bowl and melt over double boiler or in short microwave bursts

Mix the melted chocolate mixture with marshmallows, chocolate candy/chips, and biscuit/cookie bits

Spread the rocky road chocolate mix into a parchment or foil lined pan and let cool in fridge for 2 hours until set before cutting into small squares

Storage

Store the cut up rocky road square in an airtight container at cool room temperature for up to 1 week. In warm climates store refrigerated.

Rocky road slices are always popular to bring to potlucks or as an edible gift.

Can rocky road bars be frozen?

Yes, you can also freeze these chocolate marshmallow squares in a freezer save container or bag for 4-6 months.

What does Rocky Road have in it?

Rocky road usually consists of chocolate and marshmallows and a crunchy component like nuts, cookies, popcorn, etc. In the British and Australian versions dried fruit, and candied cherries are common too.

These Rocky Road Bars are made from marshmallows, chocolate candy, and digestive biscuits (you can also use graham crackers or rice crispy cereal). Everything is held together with a delicious chocolate coating.

Ingredients

  • 1.5 cups chocolate chips or broken up chocolate bar
  • 7 tablespoon butter
  • 2 tablespoon honey or maple syrup
  • 2 cups mini marshmallows
  • cup candy rocks or milk chocolate chips
  • 20 digestive biscuits/cookies Graham cracker sheets in small bits (or 2.5 cups rice cereal)
  • ½ cup nuts, fruit optional (like almonds, walnuts, peanuts, pecans)

Instructions

  • Line an 8-inch square pan or form with parchment paper. Leave an overhang to be able to lift out the bars later.

  • In a heat proof bowl combine chocolate chips (chocolate bar pieces), butter and honey. Place on top of a double boiler (saucepan with simmering water) and stir over low heat until melted and smooth. Cool for about 10 minutes.

  • Alternatively microwave in short bursts, stir and keep microwaving until all melted and smooth.

  • In a large bowl stir together mini marshmallows, ⅔ cup chocolate chips/candy rocks (reserve a few for sprinkling) and broken up biscuits/Graham cracker/rice cereal with the melted chocolate mixture until everything is nicely coated.

  • Pour everything into the lined baking pan. Spread out and press down to even it out with a spoon. Sprinkle a few mini marshmallows and candy rocks on top.

  • Place in the fridge and chill for at least 2 hours. Lift chilled and hardened rocky road bars out of the form and cut into bars.

    Okay, 1) I love your photos. They're so dark and moody, like Averie said, which is totally cool and different (unlike all mine which basically scream "PINK!!" in every shot, haha). 2) These bars are so fun! I love that you made them literal rocky road bars by adding candy rocks. Such an underrated candy!!

I will definitely have another look - these bars are wonderful. Love the moody photos - I am trying, without much luck, that technique.
