This iced caramel latte recipe is sweetened with only dates, is dairy free and made with just a few basic ingredients. It’s the perfect paleo latte recipe when you need a sweet treat but don’t want all the sugar found in lattes from your local coffee shop.

This latte recipe is made by first making a super easy creamer you can store in your fridge and use all week. The creamer replaces a need for any kind of milk. Gone are the days of needing a fridge stocked with whole milk, oat milk, almond milk and different syrups for all the different coffee drinks.

This latte is made with whole food ingredients and will satisfy any need for a sweet coffee, without using any refined sugar.

I originally developed this iced caramel latte as a paleo, no added sugar version of Starbucks’s iced Caramel Macchiato. However, as the need for sweet hot lattes became present in the winter, I discovered this latte is just as delicious warm and can be added to a warm cup of coffee with just as great of results.

What are the ingredients in this iced latte recipe?

This easy recipe comes together quickly in the blender without requiring you to make homemade caramel sauce, have an espresso machine or use any sugar loaded caramel drizzle. Here’s what you will need.

  • Dates – dates actually have a caramel like flavor when you mix in a few other key ingredients (see below). Dates are also high in fiber, may help with regulating blood sugar and may even help with memory.
  • Raw cashews – cashews work with the dates and coconut milk to create a caramel flavor.
  • Canned coconut milk – the coconut milk helps with the flavor of the caramel, but also is the milk that makes the milky part of the delicious latte.
  • Peppermintflavor – you can use a peppermint flavoring or a peppermint extract, depending on what you have or what you prefer. If you are using peppermint flavoring, you may need a little more than the 1/4 teaspoon listed since it isn’t as strong.
  • Brewed hot coffee or cold brew coffee – use warm, brewed coffee if you are making a warm latte or use cold brew coffee or some type of cold coffee if you want an iced latte. It works the same.
  • Ice cubes and a tall glass – Not ingredients, but you will need these if you are making an iced latte.

A note about peppermint flavor in a caramel latte recipe

I include a peppermint flavor kick in the recipe card below. It’s optional, but I strongly suggest giving it a try. While caramel + peppermint seems like a bizarre combination, it’s super refreshing and I bet you’ll love it!

How to make this iced caramel latte recipe

  1. Add the dates, vanilla extract, salt, cashews, coconut milk, water and peppermint flavor (if using) to your high speed blender.
  2. Blend on high for 60-90 seconds.
  3. Add coffee to your creamer. I have found about 1/4 cup of creamer to every cup of coffee to be the perfect balance.

How can I make cold brew coffee?

I am sure there are many cold brew recipes that can get you a perfect cold brew if you are a connoisseur. The easiest way I have found is this:

  1. Fill a large cold brew bag with 4 cups of coarsely ground coffee (or see how much your bag can hold).
  2. Add filled nut milk bag to a large pitcher filled with 5 cups of cold, filtered water (You can adjust if needed by adding approximately 1.2 cups of water for every cup of coffee).
  3. Refrigerate for 12-16 hours.
  4. Dump your coffee grounds (or compost them/use in your garden) and transfer your cold brew to a sealed container in the refrigerator for a few days.

What if I don’t have cold brew?

If you don’t have cold brew, you can use chilled brewed/drip coffee, espresso shots (if you have an espresso machine), instant coffee, or even room temperature brewed coffee.

This iced caramel latte recipe works the same with all of those. It just depends on taste preference of the coffee.
