WHAT ARE NEWTONS?

Newtons are the trademarked version of a Cookies filled with fruit paste, by an American company Nabisco.

This company named this cookie after the city of Newton, Massachusetts.

Until 1980, this product was called as “cakes” and thereafter Nabisco labeled them as “chewy cookies.”

ORIGIN OF NEWTON RECIPE

Newtons were first made in the year 1891 by the inventor Charles M. Roser and baked at the F. A. Kennedy Steam bakery located at Cambridge, Massachusetts.

The said bakery was later purchased by Nabisco company.

Originally it was only the figs, whose paste used to be filled in the Newtons and as such, originally the traditional name of this recipe was Fig Newtons.

But in the year 2012, Nabisco dropped the word “Fig” and the cookies remained only “Newtons”.

It is said that Nabisco dropped the word for the reason that they no longer confined to the filling of Figs inside the Newtons and additionally launched the filling of strawberry, apple cinnamon, raspberry, strawberry and mixed berry.

The moto of the company was to reach the broader audience.

After the change in name and with the process of time, Newtons begin to get experimented with different and exotic fillings and Medjool dates is one of them.

Dates are no way less than figs if you looking for the similar texture and flavor as figs, except these are little sweeter and much more smooth being seed less.

This is highly recommended to bake these Date Newton cookies a day before serving because they get better next day.

Overnight stored newtons absorb the flavours of dates and become more cakey in comparison to the freshly baked crisp and crumbly Newtons.

NEWTON DATE RECIPE INGREDIENTS

BUTTER : We have used plant based butter to make our Vegan date newton recipe. We have seen few, baking Newtons with coconut oil. As we ourselves haven’t tried it with coconut oil, so can’t comment on the final outcome.

But in case you are not vegan, feel free to go for dairy butter.

FLOUR : Wheat flour is used in making the outer crust of the recipe. But in place of whole wheat flour, you can conveniently use all purpose flour.

SUGAR : Feel free to add any type of sugar you like and no need to be strict with bura sugar, which we have added. But whatever you are using, make sure it should be in powdered form.

BAKING POWDER & BAKING SODA : These both are the leavening agents which help in creating the cookies soft, fluffy and also affect their browning and flavor.

SALT : Though the cookies are sweet but adding a pinch of salt doesn’t affect their taste. Rather salt will help in enhancing the flavours of cookies. But in case, your butter is salted one, then avoid adding this extra pinch.

VANILLA ESSENCE : This is for flavour and fragrance in cookies.

MILK : If you are vegan, feel free to use any milk you have. Also, if talking about the exact measurement of milk needed, then it is not certain. Milk is added to form a dough, so add as per you wisdom as much as needed for making a tight dough.

STORAGE OF DATE NEWTONS

Shelf life of date Newtons are about 1 week if stored properly in an airtight container.

Just dig your hand into the bowl and enjoy them with a warm cup of tea or coffee.

MAKING OF DOUGH (OUTER LAYER)

1. Whisk butter using electric beater until creamy. You can use hand whisk too.

2. Add sugar.

3. Firstly mix it with spatula to prevent it from flying.

4. Whisk it again until sugar and butter mixture turns creamy.

5. Add whole wheat flour, baking powder, baking soda, salt and vanilla essence.

6. Give it a good mix.

7. Then start mixing it using your hand. Remember, only bring the mixture together and don’t knead it like a normal dough. Use milk spoon by spoon only as much as needed to make a dough.

8. Make a tight dough and when it gets ready, wrap it in a cling film.

9. Refrigerate the dough for 30 minutes.

MAKING OF DATES STUFFING

10. In the meantime, prepare the dates stuffing and for that add the dates (deseeded) in blender.

11. Add cinnamon powder and butter.

12. Blend it to a fine paste. Add bit of water if finding difficulty in making a smooth paste but be careful as we need a thick paste and not the watery one.

MAKING OF DATES NEWTON

13. Take out the dough from refrigerator and unwrap it.

14. Divide it into even-sized three portions/balls.

15. Place one ball between the two greased sheets of butter paper.

16. Roll into a long flat rectangular shape.

17. Remove the top sheet and cut the uneven edges leaving behind about 4 inches wide strip.

18. Spoon some of the dates paste down the center of the flat dough in a line going lengthwise, as shown in picture below.

19. Hold the butter paper from one side and fold the bottom edge of dough up over the dates filling.

20. Likewise, fold the other side’s edge of dough overlapping the bottom edge so that the dates filling is wrapped completely with the dough. (For better understanding, refer to video attached in the post).

21. Cut the roll into about 2″ long pieces and likewise use entire dough.

22. Arrange all pieces on a baking tin lined with greased butter paper.

23. Place the baking tin in refrigerator for another 30 minutes.

24. Bake in middle rack of preheated oven @170°C with both the rods on for 25-30 minutes or until slightly brown.

25. Take them out of oven and let cool completely.

NOTES

  1. You can also use piping bag for lining the dates paste over the rectangular dough.
  2. While you are dealing with one ball of dough, better to keep rest of the two balls in refrigerator.
  3. Refrigeration of dough (twice) is very important for proper shaped and crisp cookies.

Ingredients

FOR DOUGH (OUTER LAYER)

  • 6 tbsp Vegan Butter (75 grams/3/4th Stick)
  • 1.75 Cup Whole wheat flour (240 grams)
  • 3/4 Cup Powdered Sugar (174 grams/we have used bura sugar)
  • 1/2 tsp Baking powder
  • 1/4 tsp Baking soda
  • Salt a pinch
  • 1 tsp vanilla essence
  • 2-3 tbsp Milk (plant based)

FOR DATES PASTE

  • 250 gram/0.55 lb Medjool Dates (192 grams/1.25 Cups after deseeded)
  • 1 tbsp Butter (vegan)
  • 1/4 tsp Cinnamon powder
  • 1-2 tbsp water if needed
